Las Moras undergoes a two-stage fermentation process, beginning with an open-air fermentation before moving into a sealed stage. This approach builds complexity and accentuates vivid blackberry characteristics. The coffee is then naturally dried beneath a canopy before finishing in a mechanical silo.

About the region

The region of Huila sits between the eastern and central ranges of the Andes Mountains, creating a landscape of high elevations, varying microclimates, and nutrient-rich soils. These conditions have helped make Huila one of Colombia’s most celebrated coffee-growing regions. The area surrounding Acevedo and Pitalito, where this coffee is sourced, sits in the highlands at elevations between 1,700 and 1,850 meters above sea level. The combination of altitude and diverse growing conditions provides an ideal environment for producing coffees with vibrant acidity, concentrated sweetness, and distinctive fruit characteristics.
