Varietal Pacamara

The cherries first undergo 60 hours of sealed fermentation before being pulped and fermented for another 60 hours with collected must and leachates. The process is then abruptly stopped through hot and cold water quenching before the coffee is naturally dried beneath a canopy and finished in a mechanical silo.

Meet the Farmer

Based in Bruselas, Huila, the Gasca family has built a reputation for pushing the boundaries of coffee processing through years of experimentation with fermentation and drying. After early attempts ended in failure, Jhonatan Gasca continued refining his approach, eventually helping establish the family as one of Huila’s innovative producers.
